A native of France, Chef Javier moved to Colombia as a child and then returned to Paris where he graduated from the esteemed Ferrandi Culinary School. He honed his craft at severalrenowned restaurants in Paris such as Jamin and Coretta culminating with a term at 1* Michelin restaurant Cobéa under the direction of his mentor, Chef Philippe Bélissent.
His move to the US with his family saw him at 1* Michelin rated Xiquet and then at the Four Season's hotel in Georgetown immediately prior to La Chaumiere
